Description

These Apple Fritter Bites are soft, tender, and bursting with apple flavor. Perfectly spiced and lightly sweetened, they are ideal for breakfast, brunch, or a cozy snack. Topped with a smooth apple cider glaze, they capture the classic taste of apple fritters in a convenient bite-sized form.


Ingredients

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • Apple Cider Glaze:
    2 cups powdered sugar
    1/3 cup + 2 tbsp apple cider or juice


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line a mini muffin tin with nonstick cooking spray or liners.
  2. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, mix melted butter, sugar, egg, vanilla, and applesauce until smooth.
  4. Fold wet ingredients into dry ingredients until just combined. Gently fold in diced apples.
  5. Fill prepared mini muffin tin about 3/4 full with batter.
  6. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  7. While muffins bake, prepare glaze by whisking powdered sugar and apple cider until smooth.
  8. Let fritter bites cool slightly before drizzling with apple cider glaze. Serve warm.

  • Use firm apples like Honeycrisp or Gala for best texture.
  • Can be made ahead and stored in an airtight container for up to 3 days.
