Ingredients

  • 1 lb meatballs (frozen or homemade)
  • 8 oz elbow macaroni
  • 2 cups chicken broth
  • 1 cup BBQ sauce
  • ยฝ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn (optional)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Green onions for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until heated through and lightly browned.
  2. If using frozen fully cooked meatballs, ensure they are heated completely.
  3. Add garlic powder and stir for 30 seconds.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add pasta and corn (if using). Cover and simmer for 12โ€“15 minutes, stirring occasionally, until pasta is tender.
  6. Stir in BBQ sauce and ranch dressing until well combined.
  7. Reduce heat to low and mix in shredded cheddar cheese until melted and creamy.
  8. Season with salt and pepper to taste.
  9. Garnish with green onions and serve warm.
