Ingredients
- 1 lb meatballs (frozen or homemade)
- 8 oz elbow macaroni
- 2 cups chicken broth
- 1 cup BBQ sauce
- ยฝ cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup frozen corn (optional)
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- Green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until heated through and lightly browned.
- If using frozen fully cooked meatballs, ensure they are heated completely.
- Add garlic powder and stir for 30 seconds.
- Pour in chicken broth and bring to a gentle boil.
- Add pasta and corn (if using). Cover and simmer for 12โ15 minutes, stirring occasionally, until pasta is tender.
- Stir in BBQ sauce and ranch dressing until well combined.
- Reduce heat to low and mix in shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Garnish with green onions and serve warm.
