Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (10 oz) can enchilada sauce
- 1 (14.5 oz) can diced tomatoes, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet over medium heat, cook ground beef with diced onion until browned. Drain excess grease.
- Add garlic, cumin, chili powder, salt, and pepper. Cook for 1 minute until fragrant.
- Stir in enchilada sauce, diced tomatoes, and black beans. Simmer for 5 minutes.
- Lightly grease a baking dish. Layer corn tortillas on the bottom, followed by beef mixture and cheese.
- Repeat layers, finishing with cheese on top.
- Bake uncovered for 25โ30 minutes, until bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
- Swap ground beef for ground turkey or chicken if desired.
- Add jalapeรฑos for extra heat.
