Breakfast Pancake Poppers are bite-sized, fluffy pancakes that are perfect for mornings on the go. Sweet, soft, and easy to make, they’re a fun twist on traditional pancakes that the whole family will love.
Ingredients
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Preheat a mini muffin tin and lightly grease it.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fill each muffin cup about 3/4 full with batter.
- Bake at 350°F (175°C) for 12–15 minutes or until golden brown and cooked through.
- Allow to cool slightly before serving. Optionally, drizzle with syrup or sprinkle with powdered sugar.
Notes
- Mini chocolate chips or blueberries can be added for extra flavor.
- Use a silicone muffin pan for easy removal.
- These can be made ahead and frozen for a quick breakfast.
