Description

Breakfast Pancake Poppers are bite-sized, fluffy pancakes that are perfect for mornings on the go. Sweet, soft, and easy to make, they’re a fun twist on traditional pancakes that the whole family will love.


Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract


Instructions

  1. Preheat a mini muffin tin and lightly grease it.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, egg, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fill each muffin cup about 3/4 full with batter.
  6. Bake at 350°F (175°C) for 12–15 minutes or until golden brown and cooked through.
  7. Allow to cool slightly before serving. Optionally, drizzle with syrup or sprinkle with powdered sugar.

Notes

  • Mini chocolate chips or blueberries can be added for extra flavor.
  • Use a silicone muffin pan for easy removal.
  • These can be made ahead and frozen for a quick breakfast.
