Description

Ingredients

  • 1.5 lb chicken breast, cut into bite-size pieces
  • ½ cup buffalo sauce, adjust to taste
  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil, for cooking
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cups cooked rice (white, brown, or cauliflower)
  • 2 cups celery, sliced
  • 1 cup cucumber, diced
  • 1 cup carrots, shredded
  • ½ cup red onion, diced
  • 1 avocado, sliced
  • ½ cup ranch or blue cheese dressing, add just before serving
  • 2 green onions, sliced


Instructions

  1. In a large skillet, heat olive oil over medium heat. Cook chicken until fully cooked.
  2. Add buffalo sauce and melted butter, stirring to coat the chicken evenly.
  3. Prepare bowl base by placing cooked rice in each serving bowl.
  4. Top rice with celery, cucumber, carrots, red onion, and avocado slices.
  5. Add buffalo chicken on top and drizzle with ranch or blue cheese dressing.
  6. Garnish with sliced green onions and serve immediately.
