Ingredients
- 1 lb boneless skinless chicken breasts, cut into bite-sized chunks
- 12 oz rotini pasta (substitute: penne, farfalle, or fusilli)
- 2 tbsp olive oil (or canola/vegetable oil)
- 2 tbsp Cajun seasoning (or mild spice mix)
- 1 tsp garlic powder (or fresh minced garlic)
- 1/2 tsp onion powder (optional)
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 tbsp butter (or olive oil for dairy-free)
- 1 cup heavy cream (or light cream/coconut cream)
- 1/2 cup chicken broth (or vegetable broth)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until chicken is fully cooked.
- Add butter and minced garlic to the skillet, sautรฉ 1โ2 minutes until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Add cooked pasta and cheeses (mozzarella, Parmesan, cheddar). Stir until cheese is melted and sauce is creamy.
- Garnish with chopped fresh parsley and serve warm.
