Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized chunks
  • 12 oz rotini pasta (substitute: penne, farfalle, or fusilli)
  • 2 tbsp olive oil (or canola/vegetable oil)
  • 2 tbsp Cajun seasoning (or mild spice mix)
  • 1 tsp garlic powder (or fresh minced garlic)
  • 1/2 tsp onion powder (optional)
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 tbsp butter (or olive oil for dairy-free)
  • 1 cup heavy cream (or light cream/coconut cream)
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until chicken is fully cooked.
  3. Add butter and minced garlic to the skillet, sautรฉ 1โ€“2 minutes until fragrant.
  4. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  5. Add cooked pasta and cheeses (mozzarella, Parmesan, cheddar). Stir until cheese is melted and sauce is creamy.
