Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde (store-bought or homemade)
  • 8 slices pepper jack cheese
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush chicken breasts with olive oil and season with cumin, chili powder, garlic powder, salt, and pepper.
  3. Grill chicken for 6โ€“8 minutes per side, until cooked through and internal temperature reaches 165ยฐF (74ยฐC).
  4. Top each chicken breast with 2 slices of pepper jack cheese and a spoonful of salsa verde. Close the grill lid for 1โ€“2 minutes to melt the cheese.
