Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup salsa verde (store-bought or homemade)
- 8 slices pepper jack cheese
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat the grill to medium-high heat.
- Brush chicken breasts with olive oil and season with cumin, chili powder, garlic powder, salt, and pepper.
- Grill chicken for 6โ8 minutes per side, until cooked through and internal temperature reaches 165ยฐF (74ยฐC).
- Top each chicken breast with 2 slices of pepper jack cheese and a spoonful of salsa verde. Close the grill lid for 1โ2 minutes to melt the cheese.
- Remove from the grill, garnish with fresh cilantro, and serve with lime wedges.
