Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat if needed.

  4. Add diced potatoes, salt, pepper, paprika, and oregano. Stir well to combine.
  5. Pour in beef broth, cover, and reduce heat to medium-low. Cook for 15โ€“20 minutes, stirring occasionally, until potatoes are tender.
  6. Once potatoes are cooked, sprinkle shredded cheddar cheese over the top.
  7. Cover and let cheese melt for 2โ€“3 minutes.
  8. Garnish with fresh parsley before serving.
