Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add diced onion and cook for 3โ€“4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  3. Add diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 15โ€“20 minutes, or until potatoes are tender.
  5. Stir in milk and heavy cream. Simmer gently for 5 minutes.
  6. Add shredded cheddar cheese and stir until fully melted and soup is creamy.
