Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add diced onion and cook for 3โ4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Add diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer for 15โ20 minutes, or until potatoes are tender.
- Stir in milk and heavy cream. Simmer gently for 5 minutes.
- Add shredded cheddar cheese and stir until fully melted and soup is creamy.
- Season with salt and pepper to taste. Serve hot.
