Cheesy Ranch Potatoes and Smoked Sausage is a hearty, flavorful one-pan meal featuring tender baby potatoes, smoky sausage, creamy cheese, and a kick of ranch seasoning. Perfect for an easy weeknight dinner or comforting weekend meal.
Ingredients
- 1 lb smoked sausage
- 4 cups baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 packet ranch seasoning mix
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- In a large bowl, toss halved potatoes with olive oil, garlic powder, onion powder, black pepper, and ranch seasoning.
- Transfer potatoes to a baking dish and roast for 20 minutes.
- Slice smoked sausage and add to the baking dish. Toss to combine and roast another 15 minutes until potatoes are tender.
- Remove from oven and sprinkle cheddar cheese over the top. Return to oven for 5 minutes until cheese melts.
- Remove from oven, stir in sour cream, garnish with parsley, and serve warm.
Notes
- Use baby red or Yukon gold potatoes for best texture.
- Leftovers can be stored in the fridge for up to 3 days.
