Description
Cheesy Taco Potatoes combine tender, seasoned potatoes with flavorful ground beef, taco seasoning, and melted Mexican cheese. Perfect for a hearty weeknight meal with optional toppings like guacamole, sour cream, and pico de gallo.
Ingredients
- 2 pounds russet potatoes, peeled and small diced
- 3–4 tablespoons oil
- 1 ½ teaspoons salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pound ground beef
- 1 packet taco seasoning
- Water, as directed on taco seasoning packet
- 8 ounce bag Mexican shredded cheese
- Optional toppings: pico de gallo, guacamole, sour cream
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking sheet.
- Toss diced potatoes with oil, salt, pepper, garlic powder, and onion powder. Spread on baking sheet and roast 25–30 minutes until tender, tossing halfway.
- While potatoes roast, cook ground beef in a skillet over medium heat. Add taco seasoning and water according to packet instructions. Simmer until thickened.
- Combine roasted potatoes with seasoned ground beef in a large skillet or baking dish.
- Sprinkle shredded Mexican cheese on top and bake an additional 5–10 minutes until cheese melts.
- Serve hot with optional toppings like pico de gallo, guacamole, or sour cream.
