Description

Cheesy Taco Potatoes combine tender, seasoned potatoes with flavorful ground beef, taco seasoning, and melted Mexican cheese. Perfect for a hearty weeknight meal with optional toppings like guacamole, sour cream, and pico de gallo.


Ingredients

  • 2 pounds russet potatoes, peeled and small diced
  • 34 tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water, as directed on taco seasoning packet
  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking sheet.
  2. Toss diced potatoes with oil, salt, pepper, garlic powder, and onion powder. Spread on baking sheet and roast 25–30 minutes until tender, tossing halfway.
  3. While potatoes roast, cook ground beef in a skillet over medium heat. Add taco seasoning and water according to packet instructions. Simmer until thickened.
  4. Combine roasted potatoes with seasoned ground beef in a large skillet or baking dish.
  5. Sprinkle shredded Mexican cheese on top and bake an additional 5–10 minutes until cheese melts.
  6. Serve hot with optional toppings like pico de gallo, guacamole, or sour cream.
