Description
This Cheesy Vegetable Casserole is a comforting and flavorful bake, loaded with broccoli, carrots, cauliflower, zucchini, and three kinds of cheese. Perfect as a side or a main dish for family dinners.
Ingredients
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 2 cups cauliflower florets
- 1 cup zucchini, sliced
- 1/2 tsp garlic powder
- 1/4 tsp mustard powder
- 2 tbsp flour
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 2 tbsp butter
- 1 cup sharp cheddar cheese, shredded
- 1 1/2 cups milk
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a baking dish lightly with butter.
- Steam or blanch broccoli, cauliflower, carrots, and zucchini until slightly tender.
- In a saucepan, melt butter and whisk in flour, mustard powder, garlic powder, salt, and pepper to make a roux. Gradually add milk, stirring constantly until thickened.
- Remove from heat and stir in cheddar cheese until melted.
- Combine the vegetables with the cheese sauce and pour into the baking dish. Sprinkle mozzarella, Parmesan, and breadcrumbs evenly on top.
- Bake for 25โ30 minutes until the top is golden brown and bubbling.
- Let cool for 5 minutes before serving.

- Feel free to swap vegetables according to season or preference.
- Add cooked chicken or turkey for a protein boost.
- For extra crunch, toast breadcrumbs with a little butter before sprinkling on top.
