Ingredients

Cherry Filling

  • 4 cups fresh or frozen pitted sweet cherries (if frozen, thaw slightly)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract (optional)

Cobbler Muffin Batter

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 3/4 cup buttermilk (or milk with 1 tbsp lemon juice or vinegar added)
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract

Crumble Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/4 teaspoon ground cinnamon


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and line a 12-cup muffin pan with liners.
  2. In a medium saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, and almond extract. Cook until thickened. Remove from heat and let cool.
  3. In a bowl, mix flour, sugar, baking powder, baking soda, and salt for the muffin batter.
  4. Cut in butter until mixture resembles coarse crumbs.
  5. Whisk together buttermilk, egg, and vanilla. Stir into dry ingredients until just combined.
  6. Fill muffin cups halfway with batter, add a spoonful of cherry filling, then top with remaining batter.
  7. For crumble topping, mix flour, brown sugar, cinnamon, and butter until crumbly. Sprinkle over muffins.
  8. Bake for 20โ€“25 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
