Description

This Chicken Hashbrown Casserole is a creamy, cheesy, and comforting dish made with cooked chicken, hashbrowns, and a crunchy cracker topping. Perfect for family dinners or potlucks.


Ingredients

  • 1/4 cup bacon bits
  • 2 cups cooked chicken
  • 1/8 tsp dried thyme
  • 1 (10.5-ounce) can cream of chicken soup, condensed
  • 3 cups frozen hashbrowns
  • 12 Ritz crackers (about half a sleeve)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 12 oz frozen mixed vegetables


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cooked chicken, hashbrowns, cream of chicken soup, milk, thyme, bacon bits, mixed vegetables, and cheddar cheese.
  3. Pour mixture into a greased casserole dish.
  4. Crush Ritz crackers and sprinkle on top.
  5. Bake for 35–40 minutes until bubbly and top is golden. Serve warm.

Notes

  • Use leftover cooked chicken for convenience.
  • Feel free to substitute hashbrowns with tater tots for a fun variation.
