Description

Decadent Chocolate Cheesecake Bars with a crunchy Oreo crust, rich chocolate cheesecake, and a silky chocolate ganache toppingโ€”perfect for chocolate lovers!


Ingredients

  • Oreo Crust:
  • 2 cups Oreo crumbs (about 2 rows of Oreos)
  • 4 TBSP unsalted butter, melted
  • Chocolate Cheesecake:
  • 24 oz cream cheese, room temperature
  • 1 cup white granulated sugar
  • 1/2 cup unsweetened cocoa powder (Dutch process)
  • 8 oz chocolate bar, melted (I used Lindt 70%)
  • 1/2 cup heavy cream, room temperature
  • 1 tsp pure vanilla extract
  • 4 large eggs, room temperature
  • Chocolate Ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 9×13-inch baking pan with parchment paper.
  2. Combine Oreo crumbs and melted butter in a bowl. Press mixture firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and cocoa powder, mix until combined.
  4. Add melted chocolate, heavy cream, and vanilla extract. Beat until smooth and creamy.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Pour cheesecake mixture over the crust and smooth the top.
  7. Bake for 40โ€“45 minutes, or until edges are set and center is slightly jiggly.
  8. Let cool completely, then chill in refrigerator for at least 2 hours.
  9. For ganache, heat heavy cream until simmering and pour over chocolate chips. Stir until smooth and pour over chilled cheesecake. Slice and serve.
