Description

These Chocolate Mint Truffle Kiss Cookies are rich, fudgy, and packed with peppermint flavor. Each cookie is topped with a mint Hershey’s Kiss, making them a festive and irresistible treat for holidays or any special occasion.


Ingredients

  • About 60 unwrapped mint Hershey’s Kisses
  • 2 eggs
  • 1 cup Imperial margarine
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup brown sugar, packed
  • 1 cup unsweetened cocoa powder
  • 3 cups all-purpose flour
  • 1 1/2 cup granulated sugar
  • 1/4 tsp peppermint extract
  • 1/2 tsp salt
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  2. In a large bowl, cream together margarine, brown sugar, and granulated sugar until smooth. Beat in eggs, vanilla extract, and peppermint extract.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Roll dough into 1-inch balls and place on prepared baking sheets about 2 inches apart.
  6. Bake for 8โ€“10 minutes. Remove from oven and immediately press a mint Hershey’s Kiss into the center of each cookie.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • For stronger mint flavor, add an extra 1/4 tsp peppermint extract.
