Description

Ingredients

  • 4 white fish fillets (cod, tilapia, or halibut, about 6 oz each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter
  • Garlic Butter:
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • Coconut Lime Sauce:
  • 1 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)


Instructions

  1. Season fish fillets with salt and pepper.
  2. Heat olive oil or butter in a skillet over medium heat. Cook fish 3–4 minutes per side, until opaque and cooked through. Remove fish and set aside.
  3. For the garlic butter, melt butter in a small pan, add minced garlic, lime juice, lime zest, and parsley. Cook 1–2 minutes until fragrant.
  4. For the coconut lime sauce, whisk together coconut milk, lime juice, lime zest, salt, pepper, and paprika in a small saucepan. Heat gently until warmed.
  5. Serve fish topped with garlic butter and drizzle coconut lime sauce over the side. Garnish with extra parsley and lime wedges if desired.
