Ingredients
- 4 white fish fillets (cod, tilapia, or halibut, about 6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil or butter
- Garlic Butter:
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lime juice
- Zest of 1 lime
- Coconut Lime Sauce:
- 1 cup coconut milk
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
Instructions
- Season fish fillets with salt and pepper.
- Heat olive oil or butter in a skillet over medium heat. Cook fish 3–4 minutes per side, until opaque and cooked through. Remove fish and set aside.
- For the garlic butter, melt butter in a small pan, add minced garlic, lime juice, lime zest, and parsley. Cook 1–2 minutes until fragrant.
- For the coconut lime sauce, whisk together coconut milk, lime juice, lime zest, salt, pepper, and paprika in a small saucepan. Heat gently until warmed.
- Serve fish topped with garlic butter and drizzle coconut lime sauce over the side. Garnish with extra parsley and lime wedges if desired.
