Description

These Coffee Cake Muffins are soft, moist, and topped with a crunchy cinnamon streusel. Perfect for breakfast, brunch, or a sweet snack with coffee or tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 tsp ground cinnamon


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and line a muffin tin with paper liners or grease well.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Prepare streusel by combining flour, brown sugar, cinnamon, and cold butter; cut butter into mixture until crumbly.
  6. Divide batter evenly among muffin cups and sprinkle streusel generously on top.
  7. Bake 20โ€“25 minutes until a toothpick inserted in the center comes out clean.
  8. Cool 5 minutes in the tin, then transfer to a wire rack to cool slightly before serving.
