Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup peas
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic and sautรฉ until translucent, about 3โ4 minutes.
- Add carrots and celery, cooking for another 5 minutes until slightly softened.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add shredded chicken, peas, dried thyme, salt, and pepper. Stir to combine.
- Remove the pot from heat and stir in cottage cheese until smooth and creamy.
- Serve warm, garnished with fresh herbs if desired.

- Use leftover roasted chicken or rotisserie chicken for convenience.
- For a thicker soup, blend a portion of the soup before adding cottage cheese.
