Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup peas
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic and sautรฉ until translucent, about 3โ€“4 minutes.
  2. Add carrots and celery, cooking for another 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add shredded chicken, peas, dried thyme, salt, and pepper. Stir to combine.
  5. Remove the pot from heat and stir in cottage cheese until smooth and creamy.
  6. Serve warm, garnished with fresh herbs if desired.
