Description

Cowboy Butter Lemon Bowtie Chicken with Broccoli is a bold, zesty pasta dish loaded with juicy chicken, tender broccoli, and a rich lemon-garlic cowboy butter sauce. Finished with Parmesan and fresh herbs, this easy dinner is packed with flavor and ready fast.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 6 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • Salt and black pepper, to taste
  • Zest and juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped


Instructions

  1. Cook bowtie pasta in salted water according to package instructions. Add broccoli during the last 2 minutes. Reserve 1/2 cup pasta water, then drain.
  2. Season chicken with salt, pepper, Cajun seasoning, paprika, garlic powder, and red pepper flakes.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and slice.
  4. Reduce heat to medium. Add butter and garlic to the skillet and sautรฉ until fragrant.
  5. Stir in Dijon mustard, lemon juice, lemon zest, and reserved pasta water.
  6. Add pasta, broccoli, and chicken back to the skillet. Toss to coat.
  7. Remove from heat and stir in Parmesan cheese.
  8. Garnish with parsley and chives. Serve warm.

Notes

  • Adjust red pepper flakes for desired heat.
  • Chicken thighs work well as a substitute.
  • Add spinach or asparagus for extra veggies.
