Ingredients
- 1 cup uncooked long-grain white rice
- 1 lb ground beef
- 1 small diced onion
- 4 minced garlic cloves
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 cups beef broth (low sodium)
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- 3 tbsp butter
- 2 tbsp chopped fresh parsley (optional)
Instructions
- In a large skillet, melt butter over medium heat. Add onion and garlic, cooking until fragrant and translucent.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in uncooked rice, Italian seasoning, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 15–20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and stir in milk, cheddar, and Parmesan cheese until creamy.
- Garnish with chopped parsley and serve warm.
