Description

Crack Chicken Noodle Soup is a creamy, cheesy, and comforting soup with tender chicken, crispy bacon, egg noodles, and a savory blend of cream cheese, cheddar, and heavy cream. Perfect for cozy nights and family dinners.


Ingredients

  • 6 slices bacon, cooked and crumbled
  • 1 lb chicken breasts, boneless skinless
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 green onion or chives, chopped
  • ½ tsp dried parsley
  • ½ tsp dried thyme
  • 6 cups chicken broth
  • 8 oz egg noodles
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 cup cheddar cheese
  • ½ cup cream cheese
  • 1 cup heavy cream


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, garlic, carrots, and celery until softened.
  2. Add chicken breasts and chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until chicken is cooked through.
  3. Remove chicken, shred, and return to pot.
  4. Add egg noodles and cook according to package instructions until tender.
  5. Stir in cream cheese, cheddar cheese, and heavy cream until melted and creamy. Season with salt, pepper, parsley, and thyme.
  6. Top with crumbled bacon and green onions before serving.

Notes

  • Rotisserie chicken can be used for a quicker version.
  • Add extra veggies like peas or corn if desired.
