Ingredients
- 6 slices bacon, cooked and crumbled
- 1 lb chicken breasts, boneless skinless
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 1 green onion or chives, chopped
- ½ tsp dried parsley
- ½ tsp dried thyme
- 6 cups chicken broth
- 8 oz egg noodles
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 cup cheddar cheese
- ½ cup cream cheese
- 1 cup heavy cream
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions, garlic, carrots, and celery until softened.
- Add chicken breasts and chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until chicken is cooked through.
- Remove chicken, shred, and return to pot.
- Add egg noodles and cook according to package instructions until tender.
- Stir in cream cheese, cheddar cheese, and heavy cream until melted and creamy. Season with salt, pepper, parsley, and thyme.
- Top with crumbled bacon and green onions before serving.
Notes
- Rotisserie chicken can be used for a quicker version.
- Add extra veggies like peas or corn if desired.
