Ingredients

  • 2 lb. boneless skinless chicken breasts (about 4)
  • 1/4 cup all-purpose flour
  • 1/4 cup cilantro, chopped, plus more for topping
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • 1 tbsp brown sugar (or coconut sugar)
  • 2 limes
  • 1 green onion, chopped, for garnish
  • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper, then lightly coat with flour.
  2. Heat coconut oil and olive oil in a skillet over medium heat. Sear chicken 3โ€“4 minutes per side until golden, then remove from skillet.
  3. Add minced garlic to the skillet and sautรฉ 30 seconds until fragrant.
  4. Pour in coconut milk, chicken broth, and brown sugar. Stir to combine and bring to a simmer.
  5. Return chicken to skillet, cover, and cook 10โ€“12 minutes until chicken is cooked through.
  6. Remove lid, squeeze in lime juice, and sprinkle chopped cilantro over top.
  7. Garnish with green onions and serve warm.
