Description
Creamy Coconut Lime Chicken is a flavorful, tropical-inspired dish featuring tender chicken breasts in a rich coconut-lime sauce, perfect for a weeknight dinner.
Ingredients
- 2 lb. boneless skinless chicken breasts (about 4)
- 1/4 cup all-purpose flour
- 1/4 cup cilantro, chopped, plus more for topping
- 2 tbsp coconut oil
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 cup coconut milk
- 2/3 cup chicken broth
- 1 tbsp brown sugar (or coconut sugar)
- 2 limes
- 1 green onion, chopped, for garnish
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper, then lightly coat with flour.
- Heat coconut oil and olive oil in a skillet over medium heat. Sear chicken 3โ4 minutes per side until golden, then remove from skillet.
- Add minced garlic to the skillet and sautรฉ 30 seconds until fragrant.
- Pour in coconut milk, chicken broth, and brown sugar. Stir to combine and bring to a simmer.
- Return chicken to skillet, cover, and cook 10โ12 minutes until chicken is cooked through.
- Remove lid, squeeze in lime juice, and sprinkle chopped cilantro over top.
- Garnish with green onions and serve warm.
