Ingredients

  • 1 lb ground beef, turkey, or meat alternative
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 14.5 oz diced tomatoes, with juice
  • 1 cup corn, canned or frozen
  • 15 oz black beans, drained and rinsed
  • 2 medium potatoes, diced small
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ยฝ tsp black pepper
  • 1 cup heavy cream or coconut milk
  • 1 cup shredded cheddar cheese


Instructions

  1. In a large pot, cook ground meat over medium heat until browned. Drain excess fat if necessary.
  2. Add onion and garlic, sautรฉ until soft and fragrant.
  3. Stir in broth, diced tomatoes, corn, black beans, and potatoes. Bring to a boil.
  4. Add smoked paprika, chili powder, cumin, salt, and black pepper. Reduce heat and simmer 15โ€“20 minutes until potatoes are tender.
  5. Stir in heavy cream and cheddar cheese until smooth and creamy.
