Ingredients
- 1 lb ground beef, turkey, or meat alternative
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth
- 14.5 oz diced tomatoes, with juice
- 1 cup corn, canned or frozen
- 15 oz black beans, drained and rinsed
- 2 medium potatoes, diced small
- 1 tbsp smoked paprika
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp salt
- ยฝ tsp black pepper
- 1 cup heavy cream or coconut milk
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, cook ground meat over medium heat until browned. Drain excess fat if necessary.
- Add onion and garlic, sautรฉ until soft and fragrant.
- Stir in broth, diced tomatoes, corn, black beans, and potatoes. Bring to a boil.
- Add smoked paprika, chili powder, cumin, salt, and black pepper. Reduce heat and simmer 15โ20 minutes until potatoes are tender.
- Stir in heavy cream and cheddar cheese until smooth and creamy.
- Serve hot, optionally garnished with extra cheese or fresh parsley.
