Crispy Chicken Taquitos are golden, crunchy, and stuffed with a flavorful chicken and cheese filling. Perfect for parties, snacks, or a fun dinner, they pair wonderfully with sour cream, guacamole, or your favorite salsa.
Ingredients
- 2 cups cooked shredded chicken (rotisserie works great!)
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup salsa
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 8 small flour or corn tortillas
- Cooking spray or neutral oil for brushing
- Optional toppings: fresh cilantro, sour cream, avocado, extra cheese
Instructions
- Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- In a medium bowl, combine shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper.
- Warm tortillas slightly to make them pliable. Place a portion of the chicken mixture onto each tortilla and roll tightly.
- Place taquitos seam-side down on the prepared baking sheet. Brush or spray lightly with oil.
- Bake for 15โ20 minutes, or until golden brown and crispy.
- Serve warm with desired toppings such as sour cream, guacamole, cilantro, or extra cheese.
Notes
- For extra crispiness, broil for 1โ2 minutes at the end of baking, watching carefully to prevent burning.
- Taquitos can be prepared ahead of time and frozen before baking; bake directly from frozen, adding a few extra minutes to the cooking time.
- Feel free to swap the chicken for cooked shredded beef or turkey for variation.
