Description

Crispy Chicken Taquitos are golden, crunchy, and stuffed with a flavorful chicken and cheese filling. Perfect for parties, snacks, or a fun dinner, they pair wonderfully with sour cream, guacamole, or your favorite salsa.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup salsa
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • Cooking spray or neutral oil for brushing
  • Optional toppings: fresh cilantro, sour cream, avocado, extra cheese


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper.
  3. Warm tortillas slightly to make them pliable. Place a portion of the chicken mixture onto each tortilla and roll tightly.
  4. Place taquitos seam-side down on the prepared baking sheet. Brush or spray lightly with oil.
  5. Bake for 15โ€“20 minutes, or until golden brown and crispy.
  6. Serve warm with desired toppings such as sour cream, guacamole, cilantro, or extra cheese.

Notes

  • For extra crispiness, broil for 1โ€“2 minutes at the end of baking, watching carefully to prevent burning.
  • Taquitos can be prepared ahead of time and frozen before baking; bake directly from frozen, adding a few extra minutes to the cooking time.
