Ingredients
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 package frozen pierogis (cheese or potato-filled)
- 4 cups chicken broth
- 1 cup sour cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ยฝ teaspoon black pepper
- 1 teaspoon salt, or to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken, onion, garlic, carrots, potatoes, celery, thyme, paprika, salt, and pepper in a slow cooker.
- Pour in chicken broth and stir to combine.
- Cover and cook on low for 5โ6 hours or on high for 2โ3 hours, until chicken is cooked through and vegetables are tender.
- About 30 minutes before serving, add frozen pierogis and stir gently.
- If desired, whisk in flour to thicken the stew slightly and add sour cream, stirring to combine.
- Garnish with chopped fresh parsley and serve warm.
