Crock Pot Creamy Chicken Parmesan Soup is a comforting, rich, and cheesy slow-cooker soup featuring tender chicken, savory tomatoes, and a creamy Parmesan finish. Perfect for an easy weeknight dinner with minimal prep.
Ingredients
- 2โ3 boneless, skinless chicken breasts (or thighs)
- 4 cups low-sodium chicken broth
- 1 small yellow onion, finely chopped
- 3โ4 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (14.5 oz) can crushed tomatoes
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Place chicken, chicken broth, onion, garlic, Italian seasoning, red pepper flakes, and crushed tomatoes in a crock pot.
- Cook on low for 6โ7 hours or high for 3โ4 hours until chicken is tender.
- Remove chicken and shred with two forks, then return to the crock pot.
- Stir in heavy cream and Parmesan cheese until melted and creamy.
- If desired, mix cornstarch with cold water and stir in to thicken the soup.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- Use thighs for juicier chicken.
- Optional: sprinkle extra Parmesan on top when serving.
- Soup can be stored in the refrigerator for up to 3 days.
