Description

Crock Pot Creamy Chicken Parmesan Soup is a comforting, rich, and cheesy slow-cooker soup featuring tender chicken, savory tomatoes, and a creamy Parmesan finish. Perfect for an easy weeknight dinner with minimal prep.


Ingredients

  • 2โ€“3 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 3โ€“4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste


Instructions

  1. Place chicken, chicken broth, onion, garlic, Italian seasoning, red pepper flakes, and crushed tomatoes in a crock pot.
  2. Cook on low for 6โ€“7 hours or high for 3โ€“4 hours until chicken is tender.
  3. Remove chicken and shred with two forks, then return to the crock pot.
  4. Stir in heavy cream and Parmesan cheese until melted and creamy.
  5. If desired, mix cornstarch with cold water and stir in to thicken the soup.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

  • Use thighs for juicier chicken.
  • Optional: sprinkle extra Parmesan on top when serving.
