Description

This Crockpot Chicken Fried Rice is a simple, comforting dish perfect for busy weeknights. Tender chicken, turkey bacon, mixed vegetables, and fluffy rice cook together in savory flavors, making it a family-friendly favorite.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 cup Turkey Bacon, chopped
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 3 cups cooked rice (day-old rice works best)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, diced
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Place chicken breasts in the slow cooker and season with salt and pepper.
  2. Add turkey bacon, mixed vegetables, garlic, and ginger.
  3. Cook on Low for 4โ€“5 hours or High for 2โ€“3 hours, until chicken is fully cooked.
  4. Remove chicken, shred it, and return to the slow cooker.
  5. Add cooked rice and soy sauce, stir well, and cook for an additional 15โ€“20 minutes on Low.
  6. Stir in diced green onions and garnish with sesame seeds before serving.

Notes

  • Day-old rice works best to prevent mushy texture.
  • Add extra soy sauce or a dash of sesame oil for more flavor.
  • Can be customized with your favorite vegetables or protein substitutions.
