Ingredients
- 1 pound boneless, skinless chicken breast
- 1 cup Turkey Bacon, chopped
- 2 cups mixed vegetables (peas, carrots, corn)
- 3 cups cooked rice (day-old rice works best)
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, diced
- Salt and pepper to taste

Instructions
- Place chicken breasts in the slow cooker and season with salt and pepper.
- Add turkey bacon, mixed vegetables, garlic, and ginger.
- Cook on Low for 4โ5 hours or High for 2โ3 hours, until chicken is fully cooked.
- Remove chicken, shred it, and return to the slow cooker.
