Description

This Crockpot Hamburger Potato Casserole is a hearty, creamy, and cheesy comfort food classic. Made with layers of tender potatoes, seasoned ground beef, onions, and a rich mushroom sauce, itโ€™s the perfect easy family dinner for busy nights.


Ingredients

  • 1 lb ground beef (lean or regular)
  • 4โ€“5 medium russet or Yukon gold potatoes, thinly sliced (about 1/8 inch thick)
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese (sharp or mild), divided
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional garnishes: Fresh parsley or chopped chives


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and set aside.
  2. In a small bowl, mix together cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth.
  3. Lightly grease the inside of the crockpot. Layer half of the sliced potatoes on the bottom.
  4. Spread half of the cooked beef and half of the chopped onions over the potatoes. Pour half of the soup mixture on top, then sprinkle with 1 cup of cheddar cheese.
  5. Repeat the layers with remaining potatoes, beef, onions, soup mixture, and top with the rest of the cheese.
  6. Cover and cook on LOW for 6โ€“7 hours or HIGH for 3โ€“4 hours, until potatoes are tender and cheese is bubbly.
  7. Garnish with fresh parsley or chopped chives before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cream of celery for a twist.
  • Add a pinch of paprika or cayenne for extra flavor.
