Ingredients

  • Crust:
  • 1 cup Graham Crackers or finely ground digestive biscuits
  • 2 tablespoons Granulated Sugar
  • 1 teaspoon Cinnamon

  • Cheesecake Filling:
  • 16 oz Room-Temperature Cream Cheese
  • 1/2 cup Sour Cream
  • 3 large Eggs, room-temperature
  • 1/4 cup Cornstarch
  • 2 teaspoons Vanilla Extract or vanilla bean
  • Apple Filling:
  • 5 medium Apples, peeled, cored, and chopped
  • 1/4 cup Brown Sugar
  • 1/2 teaspoon Nutmeg
  • 1 tablespoon Lemon Juice
  • Crumble Topping:
  • 1 cup Rolled Oats or quick oats
  • 1/2 cup Flour


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9-inch springform pan.
  2. Prepare the crust: Mix graham crackers, sugar, cinnamon, and melted butter. Press evenly into the bottom of the pan and set aside.
  3. Prepare the cheesecake filling: Beat cream cheese until smooth. Add sour cream, eggs, cornstarch, and vanilla. Mix until creamy and well combined.
  4. Prepare apple filling: Toss chopped apples with brown sugar, nutmeg, and lemon juice.
  5. Layer half of the apple filling over the crust, pour cheesecake filling on top, then add remaining apple filling.
  6. Prepare crumble topping: Combine oats and flour (add optional 2โ€“3 tbsp butter or sugar for extra crunch). Sprinkle over the top.
  7. Bake for 50โ€“60 minutes until the center is set and edges are lightly golden.
  8. Cool completely before removing from pan. Chill in refrigerator for 2โ€“4 hours for best texture.
