Ingredients

  • 1 lb lean ground beef
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a skillet over medium heat, brown ground beef and Italian sausage. Drain excess fat.
  2. Transfer meat to a crock pot. Add onion, garlic, crushed tomatoes, chicken broth, and Italian seasoning. Stir to combine.
  3. Cover and cook on low for 6โ€“7 hours or high for 3โ€“4 hours.
  4. About 30 minutes before serving, add broken lasagna noodles. Stir and continue cooking until noodles are tender.
  5. Serve soup in bowls and top each with a dollop of ricotta cheese and a sprinkle of shredded mozzarella.
