Crock Pot Lasagna Soup is a warm, comforting dish that combines all the flavors of classic lasagna in a hearty soup form. Perfect for cozy nights at home.
Ingredients
- 1 lb lean ground beef
- 1 lb Italian sausage (mild or spicy)
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 28 oz crushed tomatoes (canned)
- 4 cups low-sodium chicken broth
- 8 oz lasagna noodles, broken into pieces
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown ground beef and Italian sausage. Drain excess fat.
- Transfer meat to a crock pot. Add onion, garlic, crushed tomatoes, chicken broth, and Italian seasoning. Stir to combine.
- Cover and cook on low for 6โ7 hours or high for 3โ4 hours.
- About 30 minutes before serving, add broken lasagna noodles. Stir and continue cooking until noodles are tender.
- Serve soup in bowls and top each with a dollop of ricotta cheese and a sprinkle of shredded mozzarella.
Notes
- Adjust seasoning with salt and pepper to taste.
- For extra flavor, sprinkle fresh basil or parsley before serving.
- Leftovers can be stored in the refrigerator for 2โ3 days; noodles may absorb some liquid, so add extra broth when reheating.
