Description

Ingredients

  • 3โ€“4 lbs organic chicken, skin removed (drumsticks + thigh pieces)
  • 1 tsp smoked paprika
  • 2 tsp Lawry’s seasoning salt, divided
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ยผ cup organic all-purpose flour
  • 4 Tbsps unsalted butter
  • 2 Tbsps extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 2 fresh thyme sprigs
  • 2 cups organic chicken stock or bone broth
  • 1 cup organic heavy cream


Instructions

  1. Season chicken with smoked paprika, 1 tsp Lawry’s salt, black pepper, and garlic powder.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Brown chicken on all sides (4โ€“5 minutes per side). Remove and set aside.
  3. Add minced garlic and chopped onion to the skillet. Sautรฉ until fragrant and soft, about 3โ€“4 minutes.
  4. Sprinkle flour over the onion and garlic, stirring constantly to form a roux.
  5. Slowly whisk in chicken stock and heavy cream, making sure there are no lumps. Add remaining 1 tsp of seasoning salt and thyme sprigs.
  6. Return chicken to the skillet. Reduce heat to medium-low, cover, and simmer 25โ€“30 minutes until chicken is fully cooked and tender.
  7. Remove thyme sprigs. Serve chicken smothered in the creamy sauce with mashed potatoes, rice, or vegetables.

Notes

  • For extra richness, add a splash of white wine to the sauce while simmering.
