Description
These Easy Banana S’mores Muffins are soft, moist, and packed with chocolate, marshmallows, and graham cracker crumbs. Perfect for breakfast, snack, or dessert, they bring a fun twist on classic s’mores with the sweetness of bananas.
Ingredients
- 2/3 cup packed light brown sugar
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2/3 cup mashed ripe banana (2 medium)
- 1/2 cup sour cream
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 1 teaspoon cinnamon
- 3/4 cup graham cracker crumbs
- 2/3 cup whole milk
- 1 cup miniature chocolate chips, divided
- 1 cup miniature marshmallow bits, divided
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix brown sugar, melted butter, egg, and vanilla until smooth. Stir in mashed banana and sour cream.
- In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
- Add dry ingredients to wet mixture alternately with milk, mixing gently until just combined.
- Fold in half of the chocolate chips and marshmallow bits.
- Divide batter evenly among muffin cups. Top with remaining chocolate chips and marshmallows.
- Bake 20–25 minutes until a toothpick inserted comes out clean. Let cool slightly before serving.
Notes
- For gooier marshmallows, add some on top halfway through baking.
- Use overripe bananas for more natural sweetness.
- Store in an airtight container at room temperature for up to 3 days.
