Description

This Easy Chicken Fajita Rice Casserole is a flavorful, one-dish meal featuring tender chicken, sautรฉed peppers and onions, seasoned with fajita spices, and baked with cheesy goodness.


Ingredients

  • 2 cups long-grain white or brown rice
  • 2 cups chicken broth
  • 1.5 lbs boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 packet or 2 tbsp fajita seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup black beans (optional)
  • 1/2 cup corn (optional)
  • 1/2 cup diced tomatoes (optional)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until lightly browned.
  3. Add sliced onion and bell peppers to the skillet and sautรฉ for 3โ€“4 minutes until slightly softened.
  4. Stir in fajita seasoning and cook for 1 more minute.
  5. In a greased baking dish, combine uncooked rice, chicken mixture, chicken broth, black beans, corn, and diced tomatoes (if using).
  6. Cover with foil and bake for 35โ€“40 minutes or until rice is tender and liquid is absorbed.
  7. Remove foil, sprinkle cheese evenly over the top, and bake an additional 5โ€“7 minutes until cheese is melted and bubbly.

Notes

  • Optional vegetables can be adjusted according to preference.
  • Use cooked rice to shorten bake time.
