Ingredients

  • 16 oz linguini (or fettuccini, spaghetti, bucatini)
  • ยผ cup butter, softened (for buttering casserole dish)
  • 1 rotisserie chicken, shredded
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ยผ cup grated parmesan cheese
  • 2 (10.5 oz) cans cream of chicken soup, condensed
  • 1 (8 oz) block cream cheese, softened
  • 5 garlic cloves, minced
  • 1 cup sour cream
  • 1.5 cups chicken broth
  • 1 tsp dried parsley (plus more for topping)
  • ยฝ tsp pepper
  • 1 tsp Italian seasoning


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and butter a 9×13-inch casserole dish.
  2. Cook linguini according to package instructions until al dente; drain and set aside.
  3. In a large saucepan, combine cream of chicken soup, cream cheese, sour cream, chicken broth, garlic, dried parsley, pepper, and Italian seasoning. Heat over medium heat, whisking until smooth and creamy.
  4. Stir in shredded chicken and cooked pasta until evenly coated with sauce.
  5. Transfer mixture to prepared casserole dish and top with mozzarella, cheddar, and parmesan cheeses.
  6. Bake uncovered for 25โ€“30 minutes, or until cheese is melted and bubbly. Garnish with additional parsley before serving.
