Easy Creamy Parmesan Italian Sausage Ditalini Soup is a comforting one-pot meal packed with flavor. Savory Italian sausage, aromatic vegetables, and tender ditalini pasta simmer in a rich, creamy broth finished with Parmesan cheese and fresh spinach.
Ingredients
- 1 lb Italian sausage (mild or spicy), removed from casing
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 6 cups chicken broth
- 1 cup ditalini pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper, to taste
- Extra Parmesan and parsley for garnish
Instructions
- In a large pot over medium heat, cook Italian sausage until browned, breaking it into small pieces. Remove and set aside.
- Add onion, carrots, and celery to the same pot. Sautรฉ until softened, about 5 minutes. Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute more.
- Pour in chicken broth and bring to a boil. Stir in ditalini pasta and cook until tender, about 8โ10 minutes.
- Return sausage to the pot. Reduce heat and stir in heavy cream and Parmesan cheese until melted and creamy.
- Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with extra Parmesan and parsley.

- For extra flavor, use a mix of sweet and spicy Italian sausage.
