Description

Easy Creamy Parmesan Italian Sausage Ditalini Soup is a comforting one-pot meal packed with flavor. Savory Italian sausage, aromatic vegetables, and tender ditalini pasta simmer in a rich, creamy broth finished with Parmesan cheese and fresh spinach.


Ingredients

  • 1 lb Italian sausage (mild or spicy), removed from casing
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • Salt and pepper, to taste
  • Extra Parmesan and parsley for garnish


Instructions

  1. In a large pot over medium heat, cook Italian sausage until browned, breaking it into small pieces. Remove and set aside.
  2. Add onion, carrots, and celery to the same pot. Sautรฉ until softened, about 5 minutes. Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute more.
  3. Pour in chicken broth and bring to a boil. Stir in ditalini pasta and cook until tender, about 8โ€“10 minutes.
  4. Return sausage to the pot. Reduce heat and stir in heavy cream and Parmesan cheese until melted and creamy.
  5. Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan and parsley.

  • For extra flavor, use a mix of sweet and spicy Italian sausage.
