Description
Easy Ground Beef Enchiladas are a quick, flavorful weeknight dinner. Ground beef is seasoned with spices and onions, rolled in tortillas, and baked with enchilada sauce and melted cheese. Top with sour cream for a creamy finish.
Ingredients
- 1 lb lean ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and cooked through. Drain excess fat.
- Stir in cumin, chili powder, and a pinch of salt and pepper.
- Spread a thin layer of enchilada sauce in the bottom of a greased 9×13-inch baking dish.
- Spoon beef mixture into each tortilla, roll up, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake for 20โ25 minutes, until cheese is melted and bubbly.
- Serve hot with sour cream on top.
Notes
- Use corn tortillas for a more traditional Mexican flavor.
- Add diced jalapeรฑos or green chilies for extra heat.
- Leftovers keep well in the fridge for up to 3 days.
