Description

Easy Ground Beef Enchiladas are a quick, flavorful weeknight dinner. Ground beef is seasoned with spices and onions, rolled in tortillas, and baked with enchilada sauce and melted cheese. Top with sour cream for a creamy finish.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and cooked through. Drain excess fat.
  3. Stir in cumin, chili powder, and a pinch of salt and pepper.
  4. Spread a thin layer of enchilada sauce in the bottom of a greased 9×13-inch baking dish.
  5. Spoon beef mixture into each tortilla, roll up, and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake for 20โ€“25 minutes, until cheese is melted and bubbly.
  8. Serve hot with sour cream on top.
