Easy Shepherd’s Pie Casserole is a hearty, comforting dish featuring savory ground beef and vegetables topped with creamy mashed potatoes, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with chopped onion and garlic until beef is browned; drain excess fat.
  3. Add frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes.
  4. Transfer beef mixture to a greased 9×13-inch baking dish.
  5. Spread mashed potatoes evenly over the beef mixture and dot with butter.
  6. Optional: sprinkle shredded cheddar cheese on top.
  7. Bake uncovered for 20–25 minutes, until the top is golden and bubbly.
