Description
A comforting and easy slow cooker casserole featuring ground beef, potatoes, beans, corn, and tomatoes, all topped with melted cheddar. Perfect for a hearty family dinner with minimal effort.
Ingredients
- 1 lb (450g) ground beef
- 4 medium potatoes, peeled and diced
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can diced tomatoes, undrained
- 1 cup frozen corn kernels
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ยฝ teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 cup shredded cheddar cheese
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- In a skillet, brown ground beef over medium heat. Drain excess fat.
- Transfer beef to a slow cooker and add potatoes, kidney beans, diced tomatoes, corn, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
- Cover and cook on low for 6โ7 hours or on high for 3โ4 hours until potatoes are tender.
- Sprinkle cheddar cheese on top during the last 15 minutes of cooking to melt.
- Garnish with fresh parsley or cilantro before serving.
