Description

A comforting and easy slow cooker casserole featuring ground beef, potatoes, beans, corn, and tomatoes, all topped with melted cheddar. Perfect for a hearty family dinner with minimal effort.


Ingredients

  • 1 lb (450g) ground beef
  • 4 medium potatoes, peeled and diced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 cup frozen corn kernels
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ยฝ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley or cilantro, chopped (for garnish)


Instructions

  1. In a skillet, brown ground beef over medium heat. Drain excess fat.
  2. Transfer beef to a slow cooker and add potatoes, kidney beans, diced tomatoes, corn, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6โ€“7 hours or on high for 3โ€“4 hours until potatoes are tender.
  4. Sprinkle cheddar cheese on top during the last 15 minutes of cooking to melt.
  5. Garnish with fresh parsley or cilantro before serving.
