Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 tsp dried thyme)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon balsamic vinegar
- 1 cup dry orzo pasta
- 2 cups beef broth, low sodium preferred
- 1/2 cup heavy cream
- 1 cup shredded Gruyรจre cheese (or Swiss cheese)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Optional: fresh parsley or chives for garnish
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a 9×9-inch baking dish.
- In a large skillet, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until caramelized (about 20โ25 minutes).
- Add garlic, thyme, salt, pepper, and balsamic vinegar; cook for 1โ2 minutes until fragrant.
- Stir in orzo pasta, then add beef broth and heavy cream. Simmer for 5โ7 minutes until orzo begins to soften.
- Transfer mixture to prepared baking dish. Top with Gruyรจre, mozzarella, and Parmesan cheeses.
- Bake uncovered for 20โ25 minutes, until cheese is melted and bubbly.
- Garnish with fresh parsley or chives if desired. Serve warm.
