Ingredients

  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 1 cup dry orzo pasta
  • 2 cups beef broth, low sodium preferred
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyรจre cheese (or Swiss cheese)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: fresh parsley or chives for garnish


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9×9-inch baking dish.
  2. In a large skillet, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until caramelized (about 20โ€“25 minutes).
  3. Add garlic, thyme, salt, pepper, and balsamic vinegar; cook for 1โ€“2 minutes until fragrant.
  4. Stir in orzo pasta, then add beef broth and heavy cream. Simmer for 5โ€“7 minutes until orzo begins to soften.
  5. Transfer mixture to prepared baking dish. Top with Gruyรจre, mozzarella, and Parmesan cheeses.
  6. Bake uncovered for 20โ€“25 minutes, until cheese is melted and bubbly.
