Description
French Onion Soup Mac & Cheese combines the rich flavors of caramelized onions, savory broth, and a trio of cheeses into a comforting baked pasta dish.
Ingredients
- 12 oz elbow macaroni
- 3 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 3 tbsp butter
- 2 cloves garlic, minced
- 3 tbsp flour
- 2 cups vegetable broth
- 2 cups whole milk
- ยฝ cup heavy cream
- 2 cups shredded Gruyรจre cheese
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tsp salt
- ยฝ tsp black pepper
- 1 tsp fresh thyme (or ยฝ tsp dried)
- 1 cup breadcrumbs
- ยฝ cup grated Parmesan cheese
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Cook macaroni according to package instructions, drain, and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add onions and cook until caramelized, about 20โ25 minutes. Add garlic and cook 1 minute more.
- Sprinkle flour over onions and stir for 1โ2 minutes.
- Gradually add vegetable broth, milk, and heavy cream, stirring constantly until smooth and slightly thickened.
- Remove from heat and stir in Gruyรจre, cheddar, and mozzarella until melted. Add salt, pepper, and thyme.
- Combine cheese sauce with cooked macaroni and pour into a greased baking dish.
- Top with breadcrumbs and Parmesan cheese. Bake 20โ25 minutes until golden and bubbly.
Notes
- For extra flavor, add a splash of white wine to the onion mixture.
- Make-ahead: assemble casserole and refrigerate overnight, then bake before serving.
- Optional: garnish with fresh thyme leaves.
