Description
Healthy Baked Feta Potatoes are crispy on the outside, tender inside, and combined with juicy cherry tomatoes and creamy feta โ a quick, flavorful, and easy side dish or main.
Ingredients
- 1.5 lbs (700g) baby potatoes, halved or quartered
- 1 block (7 oz/200g) feta cheese
- 1.5 cups cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- Salt to taste (go easy as feta is salty)
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat oven to 400ยฐF (200ยฐC) and lightly grease a baking dish with olive oil or cooking spray.
- Place halved or quartered potatoes in the dish. Drizzle with olive oil, add garlic, oregano, black pepper, and a pinch of salt. Toss to coat.
- Bake for 25โ30 minutes, until potatoes are tender and lightly golden.
- Add halved cherry tomatoes and crumble feta over the top. Bake for an additional 10โ15 minutes until feta is slightly golden and tomatoes are softened.
- Garnish with fresh basil or parsley, serve warm, and enjoy.
Notes
- Use small baby potatoes for even cooking.
- Optional: add a squeeze of lemon juice before serving for extra freshness.
