Description

Healthy Baked Feta Potatoes are crispy on the outside, tender inside, and combined with juicy cherry tomatoes and creamy feta โ€” a quick, flavorful, and easy side dish or main.


Ingredients

  • 1.5 lbs (700g) baby potatoes, halved or quartered
  • 1 block (7 oz/200g) feta cheese
  • 1.5 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • Salt to taste (go easy as feta is salty)
  • Fresh basil or parsley, for garnish (optional)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and lightly grease a baking dish with olive oil or cooking spray.
  2. Place halved or quartered potatoes in the dish. Drizzle with olive oil, add garlic, oregano, black pepper, and a pinch of salt. Toss to coat.
  3. Bake for 25โ€“30 minutes, until potatoes are tender and lightly golden.
  4. Add halved cherry tomatoes and crumble feta over the top. Bake for an additional 10โ€“15 minutes until feta is slightly golden and tomatoes are softened.
  5. Garnish with fresh basil or parsley, serve warm, and enjoy.

  • Use small baby potatoes for even cooking.
