Ingredients

Greek Salsa

  • ยฝ cucumber, diced
  • ยผ red onion, diced
  • ยผ cup kalamata olives, sliced
  • Salt and pepper to taste
  • Juice of ยฝ lemon
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped

Tzatziki

  • 1 cup coconut yogurt (Culina recommended)
  • 3 tbsp cucumber, diced
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of ยผ lemon

Chicken Bowls

  • 2 tsp olive oil
  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of ยฝ lemon
  • Salt and pepper to taste (omit pepper for AIP)
  • Rice or cauliflower rice to serve


Instructions

  1. Prepare the Greek salsa by combining cucumber, red onion, olives, lemon juice, dill, parsley, salt, and pepper in a bowl. Set aside.
  2. Make the tzatziki by mixing coconut yogurt, cucumber, dill, garlic powder, salt, and lemon juice. Chill until ready to serve.
  3. Heat olive oil in a skillet over medium heat. Add ground chicken and cook until browned, breaking it up with a spatula.
  4. Add garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper to the chicken. Cook for 2โ€“3 more minutes until fragrant and cooked through.
  5. Serve chicken over rice or cauliflower rice. Top with Greek salsa and a dollop of tzatziki.
