Hearty Black Beans and Rice with Sausage is a flavorful one-pot meal combining smoky sausage, aromatic spices, tender rice, and protein-packed black beans. Garnished with fresh cilantro and lime, it’s perfect for a comforting weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 12 ounces smoked sausage, sliced into rounds
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ยฝ teaspoon dried oregano
- ยฝ teaspoon chili powder
- 1 cup long-grain white rice, uncooked
- 1 can (15 ounces) black beans, drained and rinsed
- 2 cups chicken broth, low sodium preferred
- Salt and black pepper to taste
- ยผ cup fresh cilantro, chopped, for garnish
- 1 lime, cut into wedges, for serving
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
- Add diced onion, bell pepper, and garlic. Sautรฉ for 3โ4 minutes until softened and fragrant.
- Stir in cumin, smoked paprika, oregano, chili powder, salt, and pepper. Cook for 1 minute to bloom the spices.
- Add uncooked rice and stir to coat in the spices and sausage fat.
- Pour in chicken broth and add black beans. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18โ20 minutes until rice is tender and liquid is absorbed.
- Remove from heat, fluff rice with a fork, and garnish with chopped cilantro. Serve with lime wedges on the side.
