Ingredients

  • 1 tablespoon olive oil
  • 12 ounces smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon dried oregano
  • ยฝ teaspoon chili powder
  • 1 cup long-grain white rice, uncooked
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups chicken broth, low sodium preferred
  • Salt and black pepper to taste
  • ยผ cup fresh cilantro, chopped, for garnish
  • 1 lime, cut into wedges, for serving


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  2. Add diced onion, bell pepper, and garlic. Sautรฉ for 3โ€“4 minutes until softened and fragrant.
  3. Stir in cumin, smoked paprika, oregano, chili powder, salt, and pepper. Cook for 1 minute to bloom the spices.
  4. Add uncooked rice and stir to coat in the spices and sausage fat.
  5. Pour in chicken broth and add black beans. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18โ€“20 minutes until rice is tender and liquid is absorbed.
  7. Remove from heat, fluff rice with a fork, and garnish with chopped cilantro. Serve with lime wedges on the side.
