Ingredients

  • ยฝ cup peanut butter
  • ยผ cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • ยฝ cup oat flour
  • ยผ cup protein powder (vanilla or unflavored)
  • ยผ teaspoon baking powder
  • ยผ cup chocolate chips


Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract until smooth.
  3. In a separate bowl, combine oat flour, protein powder, and baking powder.
  4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.

  6. Use a spoon or cookie scoop to drop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
