Ingredients
- 1 cup bell pepper, chopped
- 1 cup broccoli florets
- 1 cup cherry tomatoes
- 1/2 cup red onion, chopped
- 1/2 cup spinach
- 1 cup zucchini, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 eggs
- 1 cup cottage cheese
- 1/4 cup mozzarella cheese
- 1 tbsp olive oil
- Cooking spray or a small amount of olive oil
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a baking dish with cooking spray or olive oil.
- In a large bowl, combine bell pepper, broccoli, cherry tomatoes, red onion, spinach, and zucchini.
- Add olive oil, garlic powder, onion powder, oregano, salt, and black pepper. Toss well to coat.
- In another bowl, whisk eggs and mix in the cottage cheese until smooth.
- Pour the cottage cheese mixture over the vegetables and stir gently.
- Transfer everything into the greased baking dish and sprinkle mozzarella cheese on top.
- Bake for 30โ35 minutes or until the center is set and the top is lightly golden.
- Cool slightly, slice, and serve warm.
