A high-protein, veggie-packed casserole featuring cottage cheese, fresh vegetables, and a light mozzarella topping. Perfect for breakfast, lunch, or dinner.
Ingredients
- 1 cup cottage cheese
- 1 cup broccoli florets, chopped
- 1 cup bell pepper, diced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup spinach, chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup shredded mozzarella cheese
- 2 eggs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano
- Cooking spray or a small amount of additional olive oil for greasing the baking dish
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish with cooking spray or olive oil.
- In a large bowl, whisk together cottage cheese, eggs, olive oil, garlic powder, onion powder, salt, black pepper, and oregano.
- Add all the vegetables and stir until evenly coated.
- Pour mixture into the prepared baking dish and top with shredded mozzarella cheese.
- Bake for 25โ30 minutes or until eggs are set and cheese is golden.
- Let cool slightly before serving. Enjoy warm.
Notes
- Use fresh vegetables for best flavor, but frozen works as well.
- Add cooked chicken or turkey for extra protein.
- Can be prepared ahead and reheated for meal prep.
