Description

Hobo Casserole is a comforting ground beef and potato dish layered with creamy mushroom soup and topped with melted cheddar cheese. Perfect for a hearty weeknight dinner or family meal.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon paprika (optional, for garnish)
  • 1 tablespoon butter, melted


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a skillet over medium heat, cook ground beef with chopped onion until beef is browned and onions are soft. Drain excess fat.
  3. Add garlic powder, onion powder, salt, and black pepper to the beef mixture. Stir well.
  4. In a baking dish, layer half of the sliced potatoes. Spread half of the beef mixture over the potatoes. Repeat with remaining potatoes and beef.
  5. In a bowl, mix cream of mushroom soup with milk. Pour evenly over the layered casserole.
  6. Top with shredded cheddar cheese and drizzle melted butter over the top. Sprinkle paprika if desired.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10โ€“15 minutes until cheese is melted and bubbly, and potatoes are tender.

Notes

  • For extra flavor, add a few dashes of Worcestershire sauce to the beef mixture.
  • Can be prepared ahead of time and baked later; adjust baking time accordingly.
