Description
Hobo Casserole is a comforting ground beef and potato dish layered with creamy mushroom soup and topped with melted cheddar cheese. Perfect for a hearty weeknight dinner or family meal.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 medium potatoes, thinly sliced
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon paprika (optional, for garnish)
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a skillet over medium heat, cook ground beef with chopped onion until beef is browned and onions are soft. Drain excess fat.
- Add garlic powder, onion powder, salt, and black pepper to the beef mixture. Stir well.
- In a baking dish, layer half of the sliced potatoes. Spread half of the beef mixture over the potatoes. Repeat with remaining potatoes and beef.
- In a bowl, mix cream of mushroom soup with milk. Pour evenly over the layered casserole.
- Top with shredded cheddar cheese and drizzle melted butter over the top. Sprinkle paprika if desired.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10โ15 minutes until cheese is melted and bubbly, and potatoes are tender.
Notes
- For extra flavor, add a few dashes of Worcestershire sauce to the beef mixture.
- Can be prepared ahead of time and baked later; adjust baking time accordingly.
- Optional: Add chopped bell peppers or mushrooms for more veggies.
