Description
This Homemade Jam Donut Focaccia is a fun twist on traditional focaccia, filled with sweet raspberry preserves and finished with a simple sugar glaze. Perfect for brunch, dessert, or sharing with friends!
Ingredients
- For the bread dough:
- 1 3/4 cups warm water (105-115°F)
- 2 tsp sugar
- 1 packet active dry yeast
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 tsp salt
- 6 tbsp olive oil, divided
- For the filling:
- 1 jar raspberry preserves (Bonne Maman or similar)
- For the glaze:
- 2 cups confectioners’ sugar
- 2-4 tbsp whole milk (or as needed for consistency)
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Add bread flour, all-purpose flour, salt, and 3 tbsp olive oil. Mix until a sticky dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1–2 hours until doubled in size.
- Preheat oven to 375°F (190°C). Punch down the dough and shape into a rectangular focaccia on a greased baking sheet.
- Spread raspberry preserves evenly over the dough, leaving a small border. Fold dough over or leave as is depending on desired style.
- Make indentations with fingers on top of the dough and drizzle with remaining olive oil.
- Bake for 25–30 minutes until golden brown.
- Cool slightly, then mix confectioners’ sugar with milk to create glaze. Drizzle over warm focaccia and serve.
