Description

This Homemade Jam Donut Focaccia is a fun twist on traditional focaccia, filled with sweet raspberry preserves and finished with a simple sugar glaze. Perfect for brunch, dessert, or sharing with friends!


Ingredients

  • For the bread dough:
  • 1 3/4 cups warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • For the filling:
  • 1 jar raspberry preserves (Bonne Maman or similar)
  • For the glaze:
  • 2 cups confectioners’ sugar
  • 2-4 tbsp whole milk (or as needed for consistency)


Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Add bread flour, all-purpose flour, salt, and 3 tbsp olive oil. Mix until a sticky dough forms.
  3. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1–2 hours until doubled in size.
  4. Preheat oven to 375°F (190°C). Punch down the dough and shape into a rectangular focaccia on a greased baking sheet.
  5. Spread raspberry preserves evenly over the dough, leaving a small border. Fold dough over or leave as is depending on desired style.
  6. Make indentations with fingers on top of the dough and drizzle with remaining olive oil.
  7. Bake for 25–30 minutes until golden brown.
  8. Cool slightly, then mix confectioners’ sugar with milk to create glaze. Drizzle over warm focaccia and serve.
