Description

This Homemade Jam Donut Focaccia combines the soft, airy texture of focaccia with the sweet, fruity flavor of jam donuts. Topped with a simple glaze, itโ€™s a delicious treat for breakfast, brunch, or dessert.


Ingredients

  • 1 3/4 cups warm water (105-115ยฐF)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • For the filling: 1 jar raspberry preserves (Bonne Maman or similar)
  • For the glaze: 2 cups confectionersโ€™ sugar, 2-4 tbsp whole milk (or as needed for consistency)


Instructions

  1. In a small bowl, dissolve sugar in warm water, then sprinkle yeast over top. Let stand 5โ€“10 minutes until foamy.
  2. In a large bowl, combine bread flour, all-purpose flour, and salt. Add yeast mixture and 4 tbsp olive oil. Mix until a sticky dough forms.
  3. Knead the dough on a floured surface for 8โ€“10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1โ€“2 hours until doubled in size.
  5. Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking sheet.
  6. Punch down the dough and roll out to desired thickness. Spread raspberry preserves evenly over the dough, leaving a small border.
  7. Drizzle with remaining 2 tbsp olive oil and bake for 20โ€“25 minutes until golden brown.
  8. While warm, whisk confectionersโ€™ sugar with milk to make glaze and drizzle over the focaccia.
  9. Slice and serve.

Notes

  • Use room temperature ingredients for best yeast activation.
  • You can substitute raspberry preserves with strawberry or apricot jam.
  • Adjust glaze consistency by adding more or less milk.
