Description
This Homemade Jam Donut Focaccia combines the soft, airy texture of focaccia with the sweet, fruity flavor of jam donuts. Topped with a simple glaze, itโs a delicious treat for breakfast, brunch, or dessert.
Ingredients
- 1 3/4 cups warm water (105-115ยฐF)
- 2 tsp sugar
- 1 packet active dry yeast
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 tsp salt
- 6 tbsp olive oil, divided
- For the filling: 1 jar raspberry preserves (Bonne Maman or similar)
- For the glaze: 2 cups confectionersโ sugar, 2-4 tbsp whole milk (or as needed for consistency)
Instructions
- In a small bowl, dissolve sugar in warm water, then sprinkle yeast over top. Let stand 5โ10 minutes until foamy.
- In a large bowl, combine bread flour, all-purpose flour, and salt. Add yeast mixture and 4 tbsp olive oil. Mix until a sticky dough forms.
- Knead the dough on a floured surface for 8โ10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1โ2 hours until doubled in size.
- Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking sheet.
- Punch down the dough and roll out to desired thickness. Spread raspberry preserves evenly over the dough, leaving a small border.
- Drizzle with remaining 2 tbsp olive oil and bake for 20โ25 minutes until golden brown.
- While warm, whisk confectionersโ sugar with milk to make glaze and drizzle over the focaccia.
- Slice and serve.
Notes
- Use room temperature ingredients for best yeast activation.
- You can substitute raspberry preserves with strawberry or apricot jam.
- Adjust glaze consistency by adding more or less milk.
